Singaporean Rice

  •  1 packet Spaghetti or egg noodles whatever you prefer in boiled rice
  •  1-1/2 cups rice soaked and then boiled in salt water with whole spices
  •  1 teaspoon crushed garlic
  •  1 teaspoon whole white cumin
  •  1 teaspoon chicken powder
  •  2-3 green chillies chopped
  •  1 teaspoons ground white cumin
  •  Salt to taste
  •  Pinch white pepper
  •  3 tablespoons vinegar
  •  50 grams butter.

For Mayo Sauce:

  •  1/2 cup mayonnaise
  •  1 tablespoon cream cheese puck bottle
  •  3-4 tablespoons chili garlic sauce
  •  1 teaspoon garlic powder
  •  1/2 teaspoon red chilli powder
  •  1 teaspoon chicken powder
  •  Salt to taste
  •  2 tablespoons chopped fried garlic
  •  1/2 cup water or more to adjust consistency Pinch roasted ground cumin.

For Chicken Curry:

  •  1/4 cup oil
  •  500 grams boneless chicken chunks
  •  1 capsicum chopped very finely
  •  2-3 stalks green onion chopped with white large onion chopped
  •  1 teaspoon garlic crushed
  •  2-3 green chillies chopped
  •  1/4 cup soy sauce
  •  1 tablespoon lemon juice
  •  2 teaspoons black pepper black
  •  1 teaspoon red chilli powder
  •  1/2 teaspoon cumin powder
  •  1 teaspoon chicken powder
  •  1 tablespoon chopped coriander leaves
  •  1 tablespoon chili garlic sauce
  •  1 tablespoon hot sauce
  •  Salt to taste
  •  Splash of water
  •  Cover and cook.

For Topping:

Chopped spring onion Fried garlic chips.

Method:

1-First prepare rice. Heat butter in a wok and sauté garlic then add in whole white cumin. Next add in vinegar salt pepper chicken powder ground cumin and green chillies. Now mix I'm boiled rice and stir fry. Set aside.

2-Whisk together ingredients for sauce and set aside.

3-For chicken curry heat oil in a wok add in chicken and cook till it turns white then add in garlic and onion, Once the onion turned transparent add 1 Capsicum green chillies and Spring onion. Now add in all the spices and sauces. Add a splash of water. Cover and cook till done.

4-To assemble spread rice in a larger serving dish drizzle some Mayo sauce then a layer of boiled spaghetti. Next add in some more Mayo sauce then a layer of chicken curry drizzle some more Mayo on top.

5-Finally sprinkle some Spring onion and garlic chips on top.
